Fish Stew

Nothing satifies as much as a warm stew or soup on a chilly evening. This is my take on an Eastern North Carolina Classic of Fish Stew
So easy to make, all is it is is just a few simple ingredients. Just get a good size soup pot and you are ready to go!
In this recipe I am using 3 Tilipia filets, but Catfish or some other white fish will do as well. For this recipe instead of using a can of Campbell's Tomato Soup I am substituting a small can of Ol El Paso Mild Enchilada Sauce. The other ingredients are two cups of sliced onion, 3 cups of sliced potatoes. Two Tablespoons of Old Bay Seasoning and water.
Put a 1/4 cup of olive oil in your pot over low heat. Add the layer of onions, then the potatoes. Next the can of 10oz enchilada sauce or tomato soup. Lay the fish filets on top of this. Cover with water. Add the Old Bay. Bring the water to a boil for 5 munutes and then turn the heat down to simmer. Cook for 45 minutes. don't stir the ingredients. Just occassionally shake the pot so it want stick.
Serve with Saltine Crackers and your favorite hot sauce.
To make a lager version of this. Just double the ingredients. But repeat the layers. Onions, potatoes and fish.
